They didn't. If you pay attention, you see subtle signs early on that show they're feeling closer to each other.Indeed the entire first part of the movie, far from being just pretty scenes, shows the unspoken attraction that is developing between them, especially by Jack.
It's Jack's flashback to a happier time during the summer of '63.
The montage we see is what is going in Ennis's mind as Lureen is talking. The movie - like the story it is based on - leaves it to the viewer to decide what really happened. Lureen's account could be factual, but Ennis's suspicions might also be correct.
